NEIGE & THÉ is a non-alcoholic beverage Maison developed from 2025 by Sun&R.Lab LLC ↗ (founded November 2023 in Niigata City, Japan). The Maison opens in 2026.

Our home is Murakami, in Niigata Prefecture — a snow-deep land at the northernmost edge of Japan's tea cultivation. Here the leaves mature slowly, carrying both delicacy and depth. From this place we learned a founding idea: terroir composes taste. That principle sits at the core of the Maison.

Founder's Note

Murakami was not chosen for being the northernmost. It was chosen for the warmth of the hands — those who, even through deep-snow winters, have kept tending tea. That is where I believed the answer to my question lay.

Non-alcoholic beverages are quietly shifting from “what one has when one cannot have alcohol” to “what one actively chooses.” To let that shift take root, in luxury hospitality, as an equal experience — this is the polestar I set the day I founded Sun&R.Lab in Niigata, in November 2023.

Growers, makers, sommeliers, chefs. And you, who choose the next sip. Tea / Herbal / Fruits & Veg / Infusion — across four lines, the leading voice of a new pairing language is being tuned through this dialogue. Premier service: 2026. We are in the Discovery phase, weaving relations slowly, one by one.

Place is the source of taste

In wine, terroir describes the unique expression of a place — soil, climate, terrain, and human stewardship together. The same grape variety, in different soil, speaks differently.

We carry this inheritance into the world of non-alcoholic beverages. Tea, herbs, fruit, vegetables, spice — each material holds the story of the place that raised it. We let that story settle into a single drop. That is the Maison's essential theme.

Non-alcoholic beverages have long been positioned as substitutes for alcohol. We aim to change that premise.

For those who choose not to drink, we want to offer the same intellectual companionship through a tasting course — the design of aroma in conversation with the dish, restrained sweetness, taste rooted in place. Each bottle, complete on its own. This is the Maison's pride.
